The grapes are from the top vineyard Binger Scharlachberg. Quart and Slate Devon Characterise the soil of this very warm vineyard.
Water penetrably of this sparse soil reduces the growth of the grapes which increases the ripening of extremely small aroma rick Riesling berries. The Riesling of this vineyard reminds of the explosion of a fire stone.
Late harvest takes place depending on ripening level in stages by hand. Optimal extraction of aromas is being achieved by grinding straight after picking and letting them rest for a few hours at the winery. After gentle pressing, the juice ferments with wild yeasts party in wooden casks and stainless steel.
After 6 months on the yeast, the wine was bottled.
On the nose aroma od firestone, wild herbs and citrus fruit. On the palate very dense and tight. Fresh fruit aroma paired with salty hints clearly slow the character of the Quarzit. High concentration and polished acidity give the wine class and length.
