Site: Ilbesheimer Westerberg is the west slope of the "kleine Kalmit". The "small Kalmit" is a little hill (272m) that was formed during the Tertiary and the sinking of the Upper Rhine Rift. The area around the Kleine Kalmit Hill is the Palatinate is called the classical square mile of geology, because it consists of a unique combination of rock. The soil is extremely calcareous. The upper layer consists of clay.
What makes this site special are the cool morning temperatures and long evening sun. The not so "hot" sire on the Kalmit brings ripe, healthy grapes with a crispy acidity.
Wine: Elegant, slight saltiness on the finish, delicate spiciness, fine minerality, harmonious acidity, full-bodied presence on the palate, well balanced.
Vinification: Gentle processing of the grapes, spontaneous fermentation in "Halbstückfass" (6001 wooden barrels) with natural yeast, long yeast storage.
Drinking recommendation: Seafood, veal, exotic oriental cuisine.
