The grapes were picked by hand in the middle of October, very ripe berries in perfect shape. The vineyard is 22 years old and the seedlings were imported directly from Meursault - small yields but very rich grapes.
Fermentation took place in 1,200 litre oak casks; crafted woods from the nearby Hunsrück mountains.
The long contact with the yeast and the weekly stirring gives the wine its typical aroma of fresh buttered bread, and caramel. It is a very lively wine with a refreshing acidity.
It tastes best when it is cooled down below 10° Celsius, then it fits perfectly to every kind of fish, to pasta, even to Asian sweet-sour noodle dishes.
