The Rosé is a wine that is made from red Pinot Noir grapes and shows up with a salmon to rosé colour. This slight redish on rosé wines comes from the fact that the red wine grapes are treated like white wine: the grapes are only a few hours in contact to the skins before they are pressed and fermented in stainless steel tanks.
The secret of the Air wines is based on a perfect microclimate created by geological conditions. The steep, south-facing vineyards provide optimal exposure to the sun. The predominant weathering soils of slate and greywacke are easily heatable and able to store this heat as well. This is how the narrow valley which is protected by the mountains of the Eifel quickly heats up and offers the vines an ideal habitat.
Vinification: The Pinot Noir grapes are picked by hand and transported to the winery in small boxes. The grapes are pressed gently, the m must is clarified by sedimentation. The cooler and strained fermentation takes place in a stainless steel tanks. After several weeks of storage on the less, the filling takes place after about 6 months.
Tasting notes: This intensely salmon-colored Pinot Noir Rosé is a wine for sunny days of the year. Its beguiles in the nose with pronounced raspberry, strawberry and a little violet. On the palate, the rosé is very juicy, concentrated with good melting and freshness and shows up with a nice harmony between sweet and acidity.
