Schneider's Riesling "Grauschiefer" is made from grapes that were harvested in their vineyard sites - Niederhäuser Steinwingert and Rosenheck. The soil is characterised by large slate plates, which can store heat very well.
The Riesling grapes of this wine were harvested by hand in early October after a very long period of vegetation. After a mashing time of approximately three hours, the grapes were gently pressed and partially fermented with natural yeast under temperature control.
