"Nuts and lightly white, peppery spice on the nose swooping into milky-green cobnuts and the first hint of honey and honeyed white nuts on the palate. Creamy pears, dukkah, white root, spearmint and something very lightly finely root-veg bitter. Celeriac? A wonderful play of movement and structure on the palate that feels like elliptical dimensions laid over angular dimensions. A three dimensional matrix of flavours and structure that feels and tastes connected and yet has these interesting, cool spaces between the lines that allow the wine to breathe ans the person drinking it to find quietness and places to think." / Tamlyn Currin @ Jancis Robinson / 17 points

This Silvaner is their classic and goes well with many occasions.

To the east of Iphöfen lies an independent mountain that was deforested in the Middle Ages and was therefore called "bald mountain". Here the gypsum is higher and the wines are lighter in character.
Their Keuper soil is a sedimentary rock of clay interspersed with fine and thicker veins of gypsum. Keuper wines have power and a full body, like the opument marshlands in which the rock was formed. The older the vines, the better this so called "terrior" can be tasted: subtle fruity notes, a spicy, herbal aroma and a strong, mineral flavor that lingers.

With 40% share, Silvaner is the most important grape variety here. They focus on Franconian dry Silvaner, i.e. without testable sweetness. With Silvaner, you can feel the soil on which it was grown. This is why it used to be called "earthy". Silvaner is the ideal wine to accompany food, especially where food is prepered as gently and naturally as possible.

In the nose, it is discreetly fruity and finely aromatic, with a clear, slightly herbal spicy character. The taste is balanced and rounded with fine, pleasant acidity.
