The grapes are grown on a very mellow slope with loess and chalk stone. The vines grow on terraces which do not get a lot of water. This results in tiny berries with fully ripened tannins and a high concentration of extract.
Selective harvest by hand. After de-stalking, the berries ferment with wild in open barrels. The pressing of the mash is being done by hand. After fermentation, the wine matures for 18 months in French and German oak barrels before it is bottled.
Animating scent of cassis and fine wood followed by early aromas. Spicy on the palate, tea, liquoice, and dense berry flavors.
On the finish dense concentrated with a hint of Burgundy and elegance.
Food recommendation: Perfect with any red meat of game and cheese.
